Description

Pork racks are brined for seven days in our special, all natural brine then smoked over hickory chips.  The result - tender chops with a elusive smokey under current and a subtle sweetness.    

Cooking tips 

These chops are wonderful on their own or added to hearty dishes with beans or sauerkraut.  The smoking process does most of the cooking for you, so we reccomend warming gently over moderate heat to finish up the cooking.
