Flanken (Kalbi) Beef Short Ribs

Cut a quarter in thick across the bones, marinated in soy sauce, sugar, and chili paste, and grilled over a hot fire, they have the lean, bright flavor I crave on hot summer days.  Kalbi are a traditional dish from Korea, often served in crisp lettuce leaves or with kimchi.  

Cooking Tips

The sweet salty marinade works well on the grill, but I’ve also enjoyed them with simple marinades inspired by European cuisines.  The key is a hot fire and quick cooking – not more than a minute or two per side.


Kalbi Marinade

¾ cup Soy Sauce
3 Tbsp Brown Sugar
3 cloves of Garlic, sliced
½ tsp Chili Paste
1-2 Green Onions, Sliced
2 1/2 Pounds Kalbi beef ribs

Combine all the ingredients and marinate for at least an hour or overnight.  Some traditional recipes include grated Asian pear in the marinade.  If you can find them, the pears add a complex sweetness and aromatic quality to the ribs.
