Linguica originates in Portugal, but is also common in Spain and Brazil.  It’s a coarse ground, lightly smoked pork sausage flavored with smoked paprika, garlic, red chilies, and red wine.  It is a leaner sausage with distinctive flecks of coarse ground fat.  It is often a component of hearty stews like the Brazillian Feijoada, or as a pork component of Portuguese fish stews, but I remember best from breakfast cafes along the California coast where it was served in scrambles or simply grilled and served on a bun with roasted peppers.


Pork, salt, red wine, pimento, dextrose, cure, black pepper, cayenne, and garlic.  No gluten or preservatives. Contains nitrites, not fully cooked.


Portuguese Caldo Verde “Green Soup”

Lightly fry 6 oz sliced linguica in olive oil.  Reserve.  In the rendered fat, cook one sliced onion and one clove sliced garlic until softened.  Add three medium potatoes, peeled and diced, and a tablespoon of paprika.  Sautee for 2 minutes.  Add two quarts of water, and simmer until the potatoes are tender.  Add the sausage and a pound of finely shredded kale.  Simmer until the kale is tender.  Season and serve.  (Serves 4)
