Standing Rib Roast - small

  • Small- Three bones, avg. 7 lbs. (serves 6-8) 

Description

The iconic holiday roast.  Generally referred to as a prime rib roast this classic is perfect for any indulgent occasion.

Cooking Tips

Generously season the roast with salt, fresh ground black pepper, and you favorite seasonings.  Allow the roast to come to room temperature prior to cooking. 

Cook the rib roast for 15 minutes at the higher oven temperature (450 degrees F.), then turn the oven to the lower temperature (300 degrees F.) for the rest of the cooking time. Every 1/2 hour, baste the cut ends of the roast with the juices that accumulate in the roasting pan.

Total cooking time should range from 2 ½ -3 hours.

Rare, 120 degrees, center will be bright red, 12-13 minutes per pound.

Medium rare, 130, center will be very pink, 15-16 minutes per pound.

Medium, 140, center will be light pink, 17-20 minutes per pound.

Allow the roast to rest for 20-30 minutes prior to carving.
